Breakfast
Oatmeal Cups
4 cups steel cut oats
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
2 cups milk
1 egg
4 mashed (ripe) bananas
2 large apples (peeled, cubed OR food processed)
Mix all ingredients together until batter is NOT clumpy. Preheat oven to 375. Then bake for 20-25
minutes.

Overnight Oats
1/4 cup steel cut oats (you can use regular oats too)
1/4 cup water
3/4 cup greek yogurt (whatever flavor you want)
1 cup of fresh fruit
Put all ingredients together in a mason jar. Shake. Refrigerate. Enjoy in the morning!
American as Apple Pie Overnight Oats
1/4 cup oats
1/4 cup water
3/4 cup vanilla greek yogurt
1/2 tsp cinnamon
Mix above ingredients and refrigerate overnight
1 cup chopped apples
Add 1 cup chopped apples to overnight oat mixture! Enjoy!
Baked Eggs
1 dozen eggs
salt and pepper
Crack your eggs into individual cupcake cups. Bake at 375 for 20ish minutes! Cool and refrigerate. Reheat for 1 minute and enjoy! I make this ahead of time and then have 2 for breakfast each morning of the week!
Baked Omelet Cups
1 dozen eggs
chopped onions, peppers, (whatever veggies you like with eggs)
Scramble eggs, add chopped veggies. Pour equal amounts into 12 cupcake cups. Bake at 375 for 20ish minutes. Same as baked eggs, reheat for a minute and enjoy!
Almost-Clean Banana Pancakes
1 egg
2 bananas
3/4 cup oatmeal
3/4 cup flour (I used white because that is what I had, but I bet whole wheat would be good too)
3/4 cup milk
3 tsp baking powder
1/4 tsp salt
Mix all ingredients together, throw in a frying pan over medium heat! Enjoy! I added syrup and powdered sugar for the kiddos, but they were good straight out of the frying pan!
Lunch
Tuna fish
2 cans of tuna (in water)
1/4 cup plain greek yogurt
1 hard boiled egg (peeled ;p and diced)
3 stalks of celery (diced)
mustard to taste (I like a lot)
garlic powder and onion powder to taste
Mix all ingredients together and enjoy on a piece of whole grain toast or dip fresh veggies (carrot sticks, peppers, etc). I have also wrapped in a piece of lettuce (this is my favorite way to eat this)
Broccoli Cheddar Soup
3 TBSP EVOO
3 TBSP whole wheat flour
1 cup milk (I use lactaid because my kids are lactose-intolerant)
1/2 cup shredded carrots
1/2 cup shredded cauliflower
1 cup shredded broccoli
4 cups chicken or vegetable broth
3 cups shredded cheddar
In a frying pan, heat EVOO (Extra Virgin Olive Oil). Whisk in flour. Once the flour is all mixed in, it should start to make a paste. Slowly whisk in milk. Once milk is totally incorporated whisk in Chicken broth.
Transfer mixture to crockpot. Add shredded veggies (I shred mine, to hide extras so my kids don't know they are eating carrots, cauliflower, and broccoli).
Cook on high for 4 hours. Add shredded cheddar and cook an additional hour!
Stir and Enjoy!
Chicken Salad
1 large can of chicken in water
1/4 cup of Clean Ranch - dressing below
1/4 cup diced red onion
Mix and enjoy! Makes 2 servings!
Ranch Dressing
1 container of plain greek yogurt
10 tbsp milk
1/2 tsp onion powder
1/2 tsp dried dill
1 tsp dried parsley
1 tsp dried chives
1 tsp salt
pepper to taste
I put in a mason jar and shake! You will also need to shake it/stir it before you eat it!
Dinner
Meatloaf Cups
1 pound of ground beef or turkey
1 egg
1 c diced onion
1 c diced green pepper
1 TBSP onion flakes
1 TBSP garlic powder
1 tsp salt
Spoon mixture into 12 cupcakes. Top each meatloaf cupcake with a plop of ketchup.
Bake at 350 for 50 minutes.
Chicken, Quinoa, Sweet Potato “Chili”
1 ½ pounds of Chicken
1 c quinoa
2 large sweet potatoes (peeled and diced)
1 can black beans
1 can diced tomatoes
1 tsp garlic
Chili Seasoning
1TBSP chili powder
1 tsp cumin
¼ tsp cayenne pepper
¼ tsp garlic
½ tsp onion powder
1 tsp salt
¼ tsp pepper
5 cups of chicken broth or water
Cook on HIGH for 3 - 5 hours.
Pineapple Chicken "Soup"
Chicken Nuggets
1 pound of Chicken breast or tenders (whichever you prefer)
1/2 cup of almond flour (I buy mine at trader joe's or you could make your own - Just put a bunch of raw almonds in the food processor. Pulse for 30 seconds or until they are all ground)
seasonings to taste - When I make this for my kiddos, I only add garlic and onion, but for my husband and me I add lemon pepper, or parsley, etc)
Coat the raw and thawed chicken with the almond flour and season mix.
Pan Fry - using coconut oil or extra virgin olive oil, cook on medium-high heat for about 3 minutes on each side
OR you can BAKE them - 400 degrees for 20 minutes. Flip half way through!
Pineapple Chicken "Soup"
2 lbs frozen chicken breast
20 oz can crushed pineapple
1 can diced tomatoes
1 can diced green chiles
1 cup salsa verde
1 - 1/2 cups frozen sweet corn
1 can chickpeas (garbanzo beans)
1 can black beans
1 tbsp garlic powder
1 tsp onion powder
1 tsp paprika
1 tsp pink Himalayan sea salt
Place all ingredients together in crockpot for 4 - 5 hours on HIGH! Shred chicken and enjoy!
We have eaten it like soup with a little shredded cheese, crushed tortilla chips, and extra salsa. We have also put in tortilla shells like a taco!

Honey Roasted Nut Butter
2 cups of nuts
¼ cup of Honey
Warm honey for 20 seconds then coat nuts. Bake at 350 for 20 minutes. Stir every 5 minutes.
To make nut butter:
Let nuts cool for 15 minutes. Then chop/food process for 3 - 5 minutes. Until oils release and butter is creamy!
Refrigerate for 3-4 months.
Chocolate Chip "Cookies"
2 ripe bananas
2 cups of oats (I use steel cut oats)
1 cup applesauce
1/2 tsp salt
60% - 85% chocolate chips (depends on how dark you like your chocolate)
2 tsp cinnamon
Combine all ingredients. Bake at 350 for 12 minutes! I refrigerate and grab one when I need a "sugar" fix :)
Shakeology Brownie Balls
3 scoops of Shakeology
1/4 c coconut oil
1/4 c peanut butter
1/4 c unsweetened coconut
1/4 c chocolate chips (I used 60% cacao)
Mix all ingredients together. Roll into balls! Refrigerate and Enjoy!

3 scoops of Vanilla Shakeology
1/4 c coconut oil
1 tbsp honey
1/4 cup water
1 tsp pumpkin pie spice
1/2 tsp cinnamon
Mix, roll, refrigerate, eat!
